Apricot Nectar Cake -- “The Cake”
(In Memory of Grandma W)

1 Lemon Supreme Cake mix
1 cup apricot nectar
4 eggs
¾ cup oil

Mix all ingredients together. Bake in a tube/bundt pan at 350 degrees for 35-40 mins
Cool and turn upside down. Mix 1 cup powdered sugar and 4 tablespoons lemon juice. Drizzle over cool cake. Enjoy!

Texas Governor’s Mansion Cowboy Cookies

3 cups flour 3 eggs
1 tablespoon baking powder 3 cups semisweet choc chips
1 tablespoon baking soda 3 cups old-fashioned rolled oats
1 tablespoon ground cinnamon 2 cups sweetened flake coconut
1 teaspoon salt 2 cups chopped pecans (8 ounces)
1 teaspoon vanilla 1 ½ cups (3 sticks) butter at room temp
1 ½ cups granulated sugar 1 ½ cups packed light brown sugar

Heat oven to 350 degrees. Mix Flour, baking powder, baking soda, cinnamon and salt in a bowl. In 8 quart bowl, beat butter on medium speed until smooth and creamy (1 minute). Gradually beat in sugars; beat to combine (2 minutes). Add eggs, one at a time, beating after each. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. For each cookie, drop ¼ cup dough onto ungreased baking sheets, spacing 3 inches apart. Bake 17-20 mins, until edges are lightly browned; rotate sheets halfway through. Remove cookies to rack to cool. Makes 3 dozen cookies.
NOTE: for 6 dozen smaller cookies, use 2 tablespoons dough for each. Bake 15-18 mins at 350 degrees.

Strawberry Dip

1 stick/block of cream cheese (philadelphia brand works best)
1 7-oz jar marshmallow cream

Mix both together til soft. Serve with strawberries for a delicious snack!

Crazy Cake
(provided by Mom F)

1 ½ cup flour 1 teaspoon vinegar
1 cup sugar ½ teaspoon salt
½ cocoa powder ½ cup oil
1 teaspoon baking soda 1 teaspoon vanilla
1 cup water
Mix all dry ingredients. Make a hole in the middle, add wet ingredients. Mix well. Pour into a greased 9x9 pan.
Bake @ 350 degrees for 30 mins. If slicing for a party, sprinkle confectionary sugar on top for a nice sweet flavor and pretty touch.

Key-Lime White chocolate cookies

1/3 cup margarine or butter (softened)
¾ cup packed brown sugar
2 tablespoons granulated sugar
¼ cup fat free cholesterol free egg product or 2 egg whites
1 ½ teaspoons vanilla
2 cups reduced fat bisquick
4 ounces white baking bars (white chocolate from 6-ounce package), cut into chunks
1 tablespoon grated lime peel

Heat oven to 350. Beat margarine, sugars, egg product and vanilla in large bowl on low speed until well mixed. Stir in remaining ingredients.
Drop dough by rounded teaspoonfuls onto ungreased cookie sheet
Bake 8-10 mins or until set but not brown. Cool 1 minute, remove from cookie sheet to wire rack.
Makes approximately 3 dozen cookies.

Chocolate no-bake cookies

2 cups sugar

1/4 cup Cocoa

1/2 cup milk

1/2 cup margarine

1 tsp vanilla

1/4 tsp salt

1/2 cup peanut butter

3 cups quick oats

 

Combine sugar, cocoa, milk, and margarine in a saucepan.  Cook for one minute.  After it reaches a rolling boil, remove from heat, add vanilla, salt, peanut butter and oats.  Drop on waxed paper and cool. 

Makes about 5-6 dozen.
